Description

A zesty and refreshing Mediterranean salad packed with fresh herbs and vegetables.


Ingredients

Scale
  • 2 cups cucumber, finely diced
  • 2 cups tomato, finely diced
  • 1/4 cup red onion, finely diced
  • 1 tablespoon fresh parsley, chopped (or substitute cilantro, mint, or basil)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice (or red wine vinegar)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Place diced cucumber, tomato, and red onion in a large mixing bowl.
  2. Add chopped herbs, olive oil, lemon juice or vinegar, and season generously with salt and black pepper.
  3. Gently toss ingredients until evenly combined. Adjust seasoning if necessary and serve immediately.
