Ingredients

- 1/4 cup red onion, finely diced

- 2 tablespoons extra virgin olive oil
- 2 tablespoons freshly squeezed lemon juice (or red wine vinegar)
- Salt and freshly ground black pepper, to taste
Instructions
- Place diced cucumber, tomato, and red onion in a large mixing bowl.
- Add chopped herbs, olive oil, lemon juice or vinegar, and season generously with salt and black pepper.
- Gently toss ingredients until evenly combined. Adjust seasoning if necessary and serve immediately.
