Description

A delicious Mediterranean-inspired dish featuring tender chicken breasts marinated in lemon and herbs, paired with artichokes and olives.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 can (14 oz) artichoke hearts, drained and halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine the lemon juice, lemon zest, garlic, olive oil, oregano, thyme, salt, and pepper to create a bright and fragrant marinade.
  3. Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring they are well coated. Seal or cover and refrigerate for at least 30 minutes, or up to 2 hours for a more intense flavor.
  4. In a large, oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Remove the chicken from the marinade and sear for 3-4 minutes on each side until golden brown.
  5. Add the artichoke hearts and olives to the skillet, spreading them around the chicken.
  6. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Remove from the oven and sprinkle with fresh parsley before serving.

Notes

  • For best results, marinate the chicken for at least 2 hours.
  • Serve with a side of rice or a fresh salad for a complete meal.
