- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 lemon, juiced and zested
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1 can (14 oz) artichoke hearts, drained and halved
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, combine the lemon juice, lemon zest, garlic, olive oil, oregano, thyme, salt, and pepper to create a bright and fragrant marinade.
- Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring they are well coated. Seal or cover and refrigerate for at least 30 minutes, or up to 2 hours for a more intense flavor.
- In a large, oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Remove the chicken from the marinade and sear for 3-4 minutes on each side until golden brown.
- Add the artichoke hearts and olives to the skillet, spreading them around the chicken.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Remove from the oven and sprinkle with fresh parsley before serving.
Notes
- For best results, marinate the chicken for at least 2 hours.
- Serve with a side of rice or a fresh salad for a complete meal.
