- 3 lbs chuck roast
- 4 dried guajillo chiles
- 4 dried ancho chiles
- 4 cloves garlic
- 1 tsp cumin
- 4 cups low-sodium beef broth
- Chopped onion and cilantro (for serving)
Instructions
- Remove stems and seeds from guajillo and ancho chiles. Toast them in a dry skillet over medium heat for about 2 minutes until fragrant.
- Blend toasted chiles, garlic, cumin, and 1 cup of beef broth until smooth to create the marinade.
- Cut chuck roast into large chunks, season with salt and pepper, and sear in a pot over medium-high heat until browned on all sides.
- Pour the chile marinade over the meat along with the remaining beef broth. Stir well and bring to a simmer.
- Cover and reduce heat to low, cooking for at least 3 hours until the meat is fork-tender.
- Shred the meat in the broth using two forks. Serve warm with fresh tortillas topped with chopped onions and cilantro.

- For extra flavor, consider marinating the beef for a few hours or overnight.
