Description

A savory Mexican Ground Beef and Potato Skillet dish that combines ground beef, potatoes, and spices for a flavorful one-pan meal.

Ingredients

Scale
  • 1 lb ground beef (or ground turkey for a leaner option)
  • 2 medium potatoes, diced (Russet or Yukon Gold recommended)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (red or green)
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Fresh cilantro, for garnish (optional)
  • Lime wedges, for serving (optional)

Instructions

  1. Prepare the Ingredients: Wash and chop the potatoes, onion, bell pepper, and garlic.
  2. Cook the Beef: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add ground beef and cook until browned (5-7 minutes).
  3. Sauté the Vegetables: Add chopped onion, bell pepper, and minced garlic to the skillet. Sauté for 3-4 minutes until softened.
  4. Add Potatoes and Spices: Stir in diced potatoes, chili powder, cumin, paprika, salt, and pepper.
  5. Incorporate Tomatoes and Corn: Pour in diced tomatoes and add corn. Mix well.
  6. Simmer: Cover the skillet and simmer for 15-20 minutes until potatoes are tender, stirring occasionally.
  7. Garnish and Serve: Remove from heat, garnish with fresh cilantro, and serve with lime wedges.

Notes

  • Ground Beef: Substitute with ground chicken, turkey, or a plant-based meat alternative.
  • Potatoes: Sweet potatoes can be used for a sweeter flavor.
  • Spices: Adjust spices to your heat preference; add cayenne pepper for extra kick.
