Description

Mini Lemon Cheesecakes are a delightful bite-sized treat that combines creamy cheesecake with a refreshing lemon flavor, perfect for any occasion.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons sugar
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • Fresh raspberries or lemon slices for garnish (optional)

Instructions

  1. Preheat your oven to 325°F (165°C) and line a muffin tin with paper liners.
  2. In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until combined.
  3. Press about 1 tablespoon of the mixture into the bottom of each muffin liner to form a crust.
  4. In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.
  5. Gradually add the powdered sugar and mix until incorporated.
  6. Add the eggs one at a time, mixing well after each addition.
  7. Mix in the fresh lemon juice, lemon zest, and vanilla extract until the mixture is smooth and creamy.
  8. Pour the cheesecake batter over the crusts in the muffin tin, filling each cup about 3/4 full.
  9. Bake in the preheated oven for 15-18 minutes, or until the cheesecakes are set around the edges but slightly jiggly in the center.
  10. Turn off the oven and leave the cheesecake to cool in the oven with the door ajar for about 30 minutes.
  11. Remove from the oven and cool to room temperature, then refrigerate for at least 2 hours or until completely chilled.
  12. Serve chilled, garnished with fresh raspberries or lemon slices if desired.
