- 12 Oreo cookies
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 2 tablespoons unsalted butter, melted
- 1/2 teaspoon vanilla extract
- 1 large egg
- 1/4 cup sour cream
- 1/3 cup diced fresh strawberries
- 6 mini Oreo cookies (for garnish)
- Whipped cream (optional)
Instructions
- Preheat oven to 325°F (163°C). Line a muffin tin with 6 cupcake liners.
- Crush the Oreo cookies into fine crumbs and mix with melted butter. Press the mixture evenly into the bottoms of the liners.
- In a mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth.
- Add the egg and mix until combined, then fold in the sour cream and diced strawberries.
- Divide the cheesecake batter evenly over the Oreo crusts in the liners.
- Bake for 15-18 minutes, or until the centers are set.
- Remove from oven and let cool completely, then refrigerate for at least 2 hours.
- Before serving, top with whipped cream and a mini Oreo for garnish.
