Description

Mini Strawberry Oreo Cheesecakes are delightful bite-sized desserts featuring a creamy strawberry filling on top of a crunchy Oreo crust.


Ingredients

  • 12 Oreo cookies
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1/4 cup sour cream
  • 1/3 cup diced fresh strawberries
  • 6 mini Oreo cookies (for garnish)
  • Whipped cream (optional)

Instructions

  1. Preheat oven to 325°F (163°C). Line a muffin tin with 6 cupcake liners.
  2. Crush the Oreo cookies into fine crumbs and mix with melted butter. Press the mixture evenly into the bottoms of the liners.
  3. In a mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth.
  4. Add the egg and mix until combined, then fold in the sour cream and diced strawberries.
  5. Divide the cheesecake batter evenly over the Oreo crusts in the liners.
  6. Bake for 15-18 minutes, or until the centers are set.
  7. Remove from oven and let cool completely, then refrigerate for at least 2 hours.
  8. Before serving, top with whipped cream and a mini Oreo for garnish.
