Description

Delicious thumbprint cookies filled with creamy cheesecake and your choice of jam.


Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 8 oz cream cheese, softened
  • 1/3 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/3 cup jam or preserves (your choice of flavor)

Instructions

  1. In a large bowl, cream together butter and granulated sugar until light and fluffy.
  2. Add egg yolk and vanilla extract, mixing until well combined.
  3. Gradually mix in flour until a soft dough forms. Chill dough for 30 minutes.
  4. In a separate bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  5. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  6. Scoop tablespoon-sized dough balls, place on sheet, and make thumbprint indentations.
  7. Fill each indentation with 1 teaspoon of cream cheese filling and 1/2 teaspoon of jam.
  8. Bake for 13–15 minutes, or until edges are lightly golden.
  9. Cool completely on wire racks before serving or storing.
