Description

Delicious New York Cheesecake Cookies that combine the rich flavors of cheesecake in a cookie form.


Ingredients

  • 1 cup butter, softened
  • 1 1/4 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat together the softened butter and cream cheese until smooth and creamy, using a hand mixer or a stand mixer.
  3. Add the granulated sugar to the mixture and continue beating until the sugar is fully incorporated and the mixture is light and fluffy.
  4. Mix in the vanilla extract until evenly distributed.
  5. Add the egg to the bowl and beat it in until fully combined with the rest of the ingredients.
  6. In a separate bowl, whisk together the all-purpose flour, salt, and baking powder until well blended.
  7. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  8. Once the dough comes together, take a spoonful of dough and roll it into a ball, about 1 inch in diameter.
  9. Place the dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
  10. Gently flatten each cookie dough ball with the back of a spoon or your fingers.
  11. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges of the cookies begin to turn golden brown.
  12. Remove the cookies from the oven and allow them to cool on the baking sheets for about 5 minutes.
  13. Transfer the cookies to a wire rack to cool completely.
  14. Once the cookies are completely cooled, sift the powdered sugar over the tops of the cookies for a light dusting.
