Description

No-Bake Fig Jam Energy Bites are a quick and healthy snack option made with rolled oats, almond butter, and fig jam, perfect for an energy boost.


Ingredients

  • 1/2 cup almond butter (or any nut/seed butter of your choice)
  • 1/2 cup fig jam (preferably homemade or all-natural)
  • 1/4 cup honey or maple syrup (for vegan option)
  • 1/2 cup chopped nuts (e.g., walnuts, almonds, or pecans)
  • 1/4 cup chia seeds
  • 1/4 teaspoon vanilla extract
  • A pinch of sea salt
  • Optional: 1/4 cup mini dark chocolate chips or dried fruits (e.g., apricots, cranberries)

Instructions

  1. In a large mixing bowl, combine rolled oats, chopped nuts, chia seeds, and a pinch of sea salt. If you’re using chocolate chips or dried fruits, add them to the mix as well.
  2. In a separate bowl, blend almond butter, fig jam, honey (or maple syrup), and vanilla extract until smooth and well combined.
  3. Pour the wet mixture into the bowl with the dry ingredients. Stir thoroughly using a wooden spoon or your hands until everything is evenly coated and sticky.
  4. Scoop out small portions of the mixture (about 1 inch in diameter) and roll them into balls. If the mixture is too sticky, slightly dampen your hands to make rolling easier.
  5. Place the energy bites on a parchment-lined tray or plate, and refrigerate for at least 30 minutes to firm up.
  6. Once set, transfer the energy bites to an airtight container. They can be stored in the fridge for up to a week or in the freezer for up to a month.
