- 1/2 cup fig jam (preferably homemade or all-natural)
- 1/4 cup honey or maple syrup (for vegan option)
- 1/2 cup chopped nuts (e.g., walnuts, almonds, or pecans)
- 1/4 cup chia seeds
- 1/4 teaspoon vanilla extract
- A pinch of sea salt
- Optional: 1/4 cup mini dark chocolate chips or dried fruits (e.g., apricots, cranberries)
Instructions
- In a large mixing bowl, combine rolled oats, chopped nuts, chia seeds, and a pinch of sea salt. If you’re using chocolate chips or dried fruits, add them to the mix as well.
- In a separate bowl, blend almond butter, fig jam, honey (or maple syrup), and vanilla extract until smooth and well combined.
- Pour the wet mixture into the bowl with the dry ingredients. Stir thoroughly using a wooden spoon or your hands until everything is evenly coated and sticky.
- Scoop out small portions of the mixture (about 1 inch in diameter) and roll them into balls. If the mixture is too sticky, slightly dampen your hands to make rolling easier.
- Place the energy bites on a parchment-lined tray or plate, and refrigerate for at least 30 minutes to firm up.
- Once set, transfer the energy bites to an airtight container. They can be stored in the fridge for up to a week or in the freezer for up to a month.
