Instructions

  2. Combine Dry Ingredients: In a food processor, add unsweetened shredded coconut (reserving ¼ cup), almond flour, matcha powder, chia seeds, and sea salt, then pulse 3-4 times.
  3. Add Wet Ingredients and Blend: Add dates, melted coconut oil, and vanilla extract to the food processor and blend for 1-2 minutes until the mixture holds together.
  4. Check the Consistency: Adjust moisture by adding more coconut oil or liquid if too dry, or more almond flour/coconut if too wet.
  5. Roll the Balls: Scoop portions of the mixture and roll into 1-inch balls.
  6. Coat and Chill: Roll each ball in reserved shredded coconut and place on a parchment-lined baking sheet.
  7. Set the Balls: Chill in the refrigerator for at least 30 minutes to firm up before enjoying.
