Description
These No-Bake Matcha Coconut Balls are a delicious and healthy treat made with Medjool dates, shredded coconut, and culinary grade matcha powder. Enjoy them as a snack or a quick energy booster.
Ingredients
Scale
- 1 cup (about 12–15) Pitted Medjool Dates
- 1 cup Unsweetened Shredded Coconut
- ½ cup Almond Flour
- 2 tablespoons High-Quality Culinary Grade Matcha Powder
- 1 tablespoon Melted Coconut Oil
- 1 tablespoon Chia Seeds (optional)
- 1 teaspoon Vanilla Extract
- A pinch of Sea Salt
Instructions
- Prepare the Dates: Soak Medjool dates in hot water for about 10-15 minutes if they are not soft, drain and pat dry.
- Combine Dry Ingredients: In a food processor, add unsweetened shredded coconut (reserving ¼ cup), almond flour, matcha powder, chia seeds, and sea salt, then pulse 3-4 times.
- Add Wet Ingredients and Blend: Add dates, melted coconut oil, and vanilla extract to the food processor and blend for 1-2 minutes until the mixture holds together.
- Check the Consistency: Adjust moisture by adding more coconut oil or liquid if too dry, or more almond flour/coconut if too wet.
- Roll the Balls: Scoop portions of the mixture and roll into 1-inch balls.
- Coat and Chill: Roll each ball in reserved shredded coconut and place on a parchment-lined baking sheet.
- Set the Balls: Chill in the refrigerator for at least 30 minutes to firm up before enjoying.
Notes
- Ensure that your Medjool dates are pitted before blending.
- For a more intense coconut flavor, use unrefined coconut oil.
- You can experiment with adding other nut butters for variations.
