Description

Delicious Nutella Macarons that combine the rich flavors of Nutella with a delicate meringue shell.


Ingredients

Scale
  • 100 grams egg whites
  • 100 grams white sugar
  • 105 grams almond flour
  • 75 grams powdered sugar
  • 14 grams cocoa powder
  • 4 tbsp unsalted butter (56 grams)
  • 1/3 cup Nutella
  • 2 cups powdered sugar (255 grams)
  • 1/8 tsp salt
  • 24 tbsp milk (more or less as needed)
  • 1/4 cup chocolate chips
  • 1/4 cup chopped hazelnuts

Instructions

  1. Prepare a large piping bag fitted with a large round tip and line two baking sheets with parchment paper or silicon mat.
  2. Sift the powdered sugar, almond flour, and cocoa powder together and set aside.
  3. Over a pan of simmering water, whisk the egg whites and granulated sugar until frothy and the sugar is completely melted.
  4. Transfer the mixture to a stand mixer and whisk until stiff peaks form.
  5. Gently fold in the sifted powdered sugar and almond flour mixture.
  6. Transfer the batter to a piping bag fitted with a round tip and pipe onto the prepared sheets.
  7. Let the shells sit to dry for 20-40 minutes, then preheat the oven to 300°F.
  8. Bake each tray for 18-20 minutes, rotating after 5 minutes.
  9. Allow the macarons to cool before preparing the filling.
  10. For the Nutella buttercream, cream the butter, then add Nutella and mix until combined.
  11. Add powdered sugar and salt, then mix until incorporated. Adjust with milk if necessary.
  12. Pipe the filling between macaron shells and drizzle with melted chocolate, then sprinkle with chopped hazelnuts.

Notes

  • Macarons can be stored in the fridge for up to 1 week.
  • They can also be frozen for up to 2 months in an airtight container.
  • Be careful not to overmix the macaron batter.
