Old-Fashioned Buttermilk Donut Bars are delightful, fluffy, and covered in a rich brown butter maple glaze.


Ingredients

  • 315 grams all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 113 grams unsalted butter, softened
  • 150 grams granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 180 milliliters buttermilk
  • Brown Butter Maple Vanilla Bean Glaze
  • 113 grams unsalted butter
  • 180 grams powdered sugar
  • 30 milliliters pure maple syrup
  • 1 teaspoon vanilla bean paste or vanilla extract
  • 1530 milliliters milk, for thinning as needed

Instructions

  1. Preheat oven to 175°C and lightly grease a 23×33 cm rectangular baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, ground nutmeg, and salt until evenly mixed.
  3. In a large bowl, beat softened butter with granulated sugar until light and fluffy. Incorporate eggs one at a time, blending well after each addition. Mix in the vanilla extract.
  4. Alternately add the dry ingredients and buttermilk to the creamed mixture, beginning and ending with the dry ingredients. Mix just until batter is smooth and homogeneous.
  5. Transfer the batter to the prepared baking pan and smooth the surface. Bake for 22 to 25 minutes, or until a toothpick inserted in the center emerges clean. Cool completely in the pan.
  6. In a small saucepan, melt butter over medium heat, cooking until the solids turn golden and emit a nutty aroma. Remove from heat.
  7. Whisk in powdered sugar, maple syrup, and vanilla bean paste until the glaze is completely smooth. Thin with milk as needed for desired consistency.
  8. Pour the glaze evenly over the cooled bars. Allow the glaze to set, then cut into individual portions and serve.
