- 1.5 lbs boneless skinless chicken breasts or thighs
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 cup honey BBQ sauce
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped parsley or green onions (optional garnish)
Instructions
- Pat the chicken dry and cut into bite-sized pieces. Season with salt, pepper, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and sear until golden on all sides, about 3–5 minutes.
- Push the chicken to the edges of the pan and add rice to the center. Pour in the chicken broth and gently stir to distribute.
- Drizzle the honey BBQ sauce evenly over the chicken and rice. Do not stir.
- Reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender and liquid is absorbed.
- Uncover the skillet, increase the heat slightly, and cook for another 3–5 minutes to thicken and caramelize the sauce.
- Turn off the heat and garnish with chopped parsley or green onions. Serve hot.

- Rinse your rice before cooking to remove excess starch for fluffier texture.
- Use a heavy-bottomed or non-stick pan to avoid burning the rice or sauce.
