One Pan Sausage and Orzo is a quick and flavorful dish that combines Italian sausage, orzo pasta, and fresh vegetables, all cooked in one pan for easy cleanup.

- 1 pound Italian sausage (mild or spicy, your choice)
- 1 cup orzo pasta
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 can (14.5 oz) diced tomatoes, undrained
- 3 cups chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
- Parmesan cheese, grated (for serving)
Instructions
- In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Remove the sausage from the skillet and set aside, leaving the drippings in the pan.
- In the same skillet, add the chopped onion and bell pepper. Sauté for 3-4 minutes until the onion is translucent. Add the minced garlic and zucchini, cooking for an additional 2 minutes until fragrant.
- Stir in the orzo pasta, diced tomatoes (with their juices), chicken broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.
- Return the cooked sausage to the skillet, stirring to combine. Cook for an additional 2-3 minutes to heat through. Remove from heat and let it sit for a few minutes before serving.
- Garnish with fresh parsley and serve with grated Parmesan cheese on top.

- Feel free to use any type of Italian sausage you prefer.
- For a vegetarian option, substitute sausage with plant-based sausage and use vegetable broth.
