Description
A quick and delicious one pot meal combining ground turkey and pasta with fresh vegetables.

- 1 lb ground turkey
- 12 oz penne or rotini pasta
- 1 tbsp olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes, including juices
- 2 cups chicken broth
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1 cup spinach, chopped
- ½ cup Parmesan cheese, grated
- Fresh basil, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and sauté for 3–4 minutes until it becomes soft.
- Incorporate the garlic, cooking for an additional minute until aromatic.
- Add the ground turkey, breaking it apart with a spoon. Cook for 5–7 minutes until it’s browned and cooked through. Season with salt, pepper, and Italian seasoning.
- Pour in the diced tomatoes and chicken broth. Mix well and let it come to a boil.
- Stir in the pasta, ensuring it is mostly submerged in the liquid.
- Lower the heat to a simmer, cover, and cook for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid has evaporated.
- Add the chopped spinach and cook for 2–3 minutes until wilted.
- Turn off the heat and stir in the Parmesan cheese until the mixture is creamy.
- Serve warm, garnished with fresh basil and extra Parmesan if desired.
Notes
- Feel free to substitute ground turkey with ground chicken or beef.
- For a spicy kick, add red pepper flakes.
- This recipe can easily be doubled for larger families.
