Description

A quick and delicious one pot meal combining ground turkey and pasta with fresh vegetables.


Ingredients

  • 1 lb ground turkey
  • 12 oz penne or rotini pasta
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes, including juices
  • 2 cups chicken broth
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 cup spinach, chopped
  • ½ cup Parmesan cheese, grated
  • Fresh basil, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and sauté for 3–4 minutes until it becomes soft.
  2. Incorporate the garlic, cooking for an additional minute until aromatic.
  3. Add the ground turkey, breaking it apart with a spoon. Cook for 5–7 minutes until it’s browned and cooked through. Season with salt, pepper, and Italian seasoning.
  4. Pour in the diced tomatoes and chicken broth. Mix well and let it come to a boil.
  5. Stir in the pasta, ensuring it is mostly submerged in the liquid.
  6. Lower the heat to a simmer, cover, and cook for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid has evaporated.
  7. Add the chopped spinach and cook for 2–3 minutes until wilted.
  8. Turn off the heat and stir in the Parmesan cheese until the mixture is creamy.
  9. Serve warm, garnished with fresh basil and extra Parmesan if desired.

Notes

  • Feel free to substitute ground turkey with ground chicken or beef.
  • For a spicy kick, add red pepper flakes.
  • This recipe can easily be doubled for larger families.
