Description

A delicious and easy one-pot recipe featuring tender steak and pasta bathed in zesty flavors.


Ingredients

  • 8 oz. pasta (penne or fusilli)
  • 1 lb. sirloin steak, cut into thin strips
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon Italian seasoning
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add the steak strips, season with salt and pepper, and sear for 3-4 minutes until browned. Remove the steak and set it aside.
  2. In the same pot, add the chopped onion and minced garlic; sauté for 2-3 minutes until the onion is translucent and fragrant.
  3. Add the bell pepper and zucchini, cooking for an additional 3-4 minutes until slightly softened.
  4. Next, stir in the diced tomatoes (with their juice), beef broth, pasta, Italian seasoning, and lemon juice. Bring the mixture to a boil, then reduce the heat to a simmer.
  5. Cover the pot and let it cook for about 10-12 minutes, stirring occasionally until the pasta is cooked al dente and has absorbed most of the liquid.
  6. Return the steak to the pot, mixing it in and warming it through for another 2 minutes. Adjust seasoning with salt and pepper to taste.
  7. Serve the pasta hot, garnished with chopped fresh parsley and a sprinkle of Parmesan cheese, if desired.

Notes

  • You can use any type of pasta you prefer.
  • Adjust the vegetables according to what you have on hand.
  • This dish can be made ahead and reheated for convenience.
