A delicious and easy one-pot recipe featuring tender steak and pasta bathed in zesty flavors.

- 8 oz. pasta (penne or fusilli)
- 1 lb. sirloin steak, cut into thin strips
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, sliced
- 1 can (14.5 oz) diced tomatoes
- 1 cup beef broth
- 1 tablespoon Italian seasoning
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, heat olive oil over medium-high heat. Add the steak strips, season with salt and pepper, and sear for 3-4 minutes until browned. Remove the steak and set it aside.
- In the same pot, add the chopped onion and minced garlic; sauté for 2-3 minutes until the onion is translucent and fragrant.
- Add the bell pepper and zucchini, cooking for an additional 3-4 minutes until slightly softened.
- Next, stir in the diced tomatoes (with their juice), beef broth, pasta, Italian seasoning, and lemon juice. Bring the mixture to a boil, then reduce the heat to a simmer.
- Cover the pot and let it cook for about 10-12 minutes, stirring occasionally until the pasta is cooked al dente and has absorbed most of the liquid.
- Return the steak to the pot, mixing it in and warming it through for another 2 minutes. Adjust seasoning with salt and pepper to taste.
- Serve the pasta hot, garnished with chopped fresh parsley and a sprinkle of Parmesan cheese, if desired.
Notes
- You can use any type of pasta you prefer.
- Adjust the vegetables according to what you have on hand.
- This dish can be made ahead and reheated for convenience.
