Delicious and refreshing Orange Creamsicle Cheesecake Bars with a graham cracker crust.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sour cream (full-fat)
- ¾ cup granulated sugar
- ½ cup fresh orange juice
- Zest of 2 oranges
- 3 large eggs
Instructions
- Preheat oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper.
- Combine graham cracker crumbs and melted butter in a bowl; press into the bottom of the pan. Bake for 10 minutes until golden.
- In a large bowl, beat cream cheese until smooth. Gradually add sugar and mix until fluffy; incorporate sour cream next.
- Mix in fresh orange juice and zest, then add eggs one at a time, blending well.
- Pour filling over the crust and bake for 30-35 minutes until set around the edges but slightly jiggly in the center.
- Cool at room temperature before refrigerating for at least 4 hours or overnight. Lift from the pan using parchment and cut into squares.
Notes
- Let the cheesecake bars cool completely before refrigerating.
- Can be topped with whipped cream or additional orange zest before serving for extra flavor.
