Description

Delicious and refreshing Orange Creamsicle Cheesecake Bars with a graham cracker crust.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream (full-fat)
  • ¾ cup granulated sugar
  • ½ cup fresh orange juice
  • Zest of 2 oranges
  • 3 large eggs

Instructions

  1. Preheat oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper.
  2. Combine graham cracker crumbs and melted butter in a bowl; press into the bottom of the pan. Bake for 10 minutes until golden.
  3. In a large bowl, beat cream cheese until smooth. Gradually add sugar and mix until fluffy; incorporate sour cream next.
  4. Mix in fresh orange juice and zest, then add eggs one at a time, blending well.
  5. Pour filling over the crust and bake for 30-35 minutes until set around the edges but slightly jiggly in the center.
  6. Cool at room temperature before refrigerating for at least 4 hours or overnight. Lift from the pan using parchment and cut into squares.

  • Let the cheesecake bars cool completely before refrigerating.
  • Can be topped with whipped cream or additional orange zest before serving for extra flavor.
