Ingredients
- Bratwurst: 4-6 high-quality bratwurst sausages (pork or chicken)
- Beer: 1 bottle (12 oz) of your favorite lager or ale (or apple cider for a non-alcoholic option)
- Onions: 2 large yellow onions, thinly sliced
- Butter: 2 tablespoons unsalted butter (or olive oil)
- Garlic: 3 cloves, minced
- Brown Sugar: 1 tablespoon
- Salt: to taste
- Pepper: to taste
- Fresh Thyme: 1 teaspoon (or ½ teaspoon dried thyme)
- Mustard: for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Melt butter in an oven-safe skillet over medium heat, add onions and salt, and cook until soft and caramelized (about 15 minutes). Add brown sugar and garlic; cook for another 5 minutes.
- Push onions to the side and add bratwurst, searing on all sides for about 5 minutes.
- Add beer and thyme, scrape the skillet to deglaze, and bring to a simmer.
- Cover and transfer to the oven; braise for 30-40 minutes.
- Let rest for a few minutes, then serve with caramelized onions and mustard.

- For a sweeter flavor, adjust the amount of brown sugar.
