- 8 oz feta cheese, crumbled
- 1 cup ricotta cheese
- 1 tsp fresh thyme leaves (optional)
- 6 sheets phyllo pastry, cut in half lengthwise
- ¼ cup melted butter or olive oil
- ¼ cup honey
- ½ tsp red chili flakes
Instructions
- In a medium mixing bowl, combine the crumbled feta, ricotta cheese, and thyme leaves (if using). Stir until smooth.
- Unroll the phyllo pastry and keep covered with a damp towel. Cut each sheet in half lengthwise.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place one strip of phyllo pastry, brush lightly with melted butter or olive oil.
- Spoon about 1 tablespoon of the cheese filling near one end of the phyllo, fold sides inward, and roll tightly.
- Place the rolled pastry seam-side down on the baking sheet and repeat with the remaining filling and phyllo.
- Brush the tops with more melted butter or oil, leaving space between rolls.
- Bake for 15-20 minutes until golden brown and crispy.
- In a small saucepan over low heat, warm the honey and stir in red chili flakes for 1-2 minutes to infuse flavors.
- Remove rolls from the oven, let cool slightly, and drizzle with warm chili honey before serving. Garnish with extra thyme leaves if desired.
