- 2 cups pancake mix (complete or regular)
- 1 ½ cups milk
- 2 large eggs
- 1 teaspoon vanilla extract (optional)
- 1 tablespoon maple syrup (plus more for serving)
- 12 fully cooked breakfast sausage links (pork or turkey)
- 1 tablespoon butter (for greasing dish)
- ½ cup shredded cheddar cheese (optional, for a savory twist)
- Powdered sugar (optional, for dusting)
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter.
- Arrange sausage links evenly across the bottom of the dish.
- In a bowl, whisk together pancake mix, milk, eggs, vanilla, and 1 tbsp maple syrup until smooth.
- Pour the pancake batter over the sausages. Gently tap the dish on the counter to even out the batter.
- Optional: Sprinkle shredded cheese over the top for extra flavor.
- Bake for 25–30 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
- Cool slightly, then cut into squares. Dust with powdered sugar or drizzle with warm maple syrup.
Notes
- Feel free to substitute sausage with vegetarian sausage if desired.
- For a sweeter version, omit the cheese and add more maple syrup for serving.
- This dish can be made ahead and reheated for breakfast.
