- 400g rigatoni or other pasta of choice
- 250g ground pork
- 250g ground beef
- 100g pancetta, diced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 400g canned diced tomatoes
- 2 tablespoons tomato paste
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil or parsley for garnish
- Grated Parmesan cheese for serving
Instructions
- Cook the Pasta: Boil water in a large pot, add salt, and cook the rigatoni according to package instructions until al dente. Drain and set aside.
- Sauté the Pancetta: In a large skillet, heat olive oil over medium heat. Add the pancetta and cook until it becomes crispy. Remove and set aside.
- Cook the Meat: In the same skillet, add ground pork and ground beef. Season with salt and pepper. Cook until browned and fully cooked through, breaking up the meat as it cooks.
- Add Aromatics: Stir in chopped onion and minced garlic. Cook for about 3-4 minutes until the onion becomes translucent.
- Incorporate the Tomatoes: Add the canned diced tomatoes, tomato paste, oregano, and red pepper flakes (if desired). Mix well and let simmer for about 10 minutes, allowing the flavors to meld.
- Combine Pasta and Sauce: Add the drained pasta to the skillet. Stir gently to coat the pasta with the sauce. If the mixture seems dry, you can add a splash of pasta water.
- Finish with Pancetta: Return the cooked pancetta to the skillet and stir to combine evenly.
- Garnish: Remove from heat. Serve in bowls and garnish with fresh basil or parsley, along with a generous sprinkle of grated Parmesan cheese.

- For a spicy kick, increase the amount of red pepper flakes.
