Description

Pasta Alla Zozzona is a flavorful Italian dish that combines rigatoni pasta with a rich meat sauce made from ground pork, beef, and pancetta, topped with fresh herbs and Parmesan cheese.

  • 250g ground pork
  • 250g ground beef
  • 100g pancetta, diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 400g canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the Pasta: Boil water in a large pot, add salt, and cook the rigatoni according to package instructions until al dente. Drain and set aside.
  2. Sauté the Pancetta: In a large skillet, heat olive oil over medium heat. Add the pancetta and cook until it becomes crispy. Remove and set aside.
  3. Cook the Meat: In the same skillet, add ground pork and ground beef. Season with salt and pepper. Cook until browned and fully cooked through, breaking up the meat as it cooks.
  4. Add Aromatics: Stir in chopped onion and minced garlic. Cook for about 3-4 minutes until the onion becomes translucent.
  5. Incorporate the Tomatoes: Add the canned diced tomatoes, tomato paste, oregano, and red pepper flakes (if desired). Mix well and let simmer for about 10 minutes, allowing the flavors to meld.
  6. Combine Pasta and Sauce: Add the drained pasta to the skillet. Stir gently to coat the pasta with the sauce. If the mixture seems dry, you can add a splash of pasta water.
  7. Finish with Pancetta: Return the cooked pancetta to the skillet and stir to combine evenly.
  8. Garnish: Remove from heat. Serve in bowls and garnish with fresh basil or parsley, along with a generous sprinkle of grated Parmesan cheese.
