A delightful twist on traditional biscuits, adorned with fresh peaches and a sweet glaze.
Ingredients
Scale
- 2 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 2 cups cold buttermilk
- 1/4 cup chopped fresh chives (optional)
- 1/2 cup unsalted butter, melted
- 2 cups peaches, peeled and chopped (fresh or canned, drained)
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
- 1/4 cup peach preserves or jam
- 1 tablespoon water
Instructions
- Preheat oven to 450°F (232°C). Place the butter in a 9×13-inch baking dish and melt it in the oven.
- In a mixing bowl, whisk flour, baking powder, sugar, salt, and baking soda. Add chives if using.
- Pour in the cold buttermilk and gently mix until just combined. Dough will be sticky.
- Carefully remove the hot pan with melted butter and drop in spoonfuls of biscuit dough.
- In another bowl, mix chopped peaches with brown sugar, cinnamon, nutmeg, and lemon juice. Spoon over and around the biscuit dough.
- Bake for 25–30 minutes until golden on top and bubbling at the edges.
- While baking, heat the peach preserves and water until thin. Brush over the finished biscuits.
- Let rest 5 minutes and serve warm.
Notes
- Cold buttermilk is essential—keep it chilled until use for fluffier biscuits.
- Canned peaches are a great substitute, just be sure to drain them fully.
- Don’t skip the glaze—it enhances flavor and gives a beautiful finish.
