Description

Delicious peanut butter cup cookies that are soft, chewy, and filled with mini peanut butter cups for an extra treat.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 24 mini peanut butter cups, unwrapped

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a mini muffin pan or use paper liners.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the butter, peanut butter, granulated sugar, and brown sugar together until smooth and fluffy, about 2 minutes.
  4. Beat in the egg, vanilla extract, and milk until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  6. Scoop about 1 tablespoon of dough into each mini muffin cup. Press the dough down gently to form a base for the peanut butter cup.
  7. Bake for 10-12 minutes, or until the edges are lightly golden but the center is still soft.
  8. Remove from the oven and immediately press a mini peanut butter cup into the center of each cookie while they are still warm. Let the cookies cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

  • Do not overbake the cookies; they should be soft in the center.
