Ingredients

  • 4 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup pepperoni slices
  • 1/4 cup pizza sauce (plus more for dipping)
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • 1 tablespoon butter or olive oil, for cooking
  • Optional: crushed red pepper flakes, fresh basil

Instructions

  1. Preheat a large skillet or griddle over medium heat.
  2. Spread a thin layer of pizza sauce over half of each tortilla.
  3. Sprinkle mozzarella and cheddar cheese evenly over the sauce.
  4. Top with pepperoni slices and a pinch of Italian seasoning and garlic powder.
  5. Fold the tortilla in half to close, forming a half-moon shape.
  6. Lightly grease the skillet with butter or oil and cook each quesadilla for 2–3 minutes per side until golden brown and crispy.
  7. Remove and let rest for 1 minute, then slice into wedges.
  8. Serve with extra pizza sauce for dipping, and garnish with basil or red pepper flakes if desired.
