- 4 chicken thighs, bone-in and skinless
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon turmeric powder
- 1 teaspoon cinnamon powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- Salt and pepper to taste
- 2 cups chicken broth or water
- 1 cup dried apricots, halved
- 1 cup slivered almonds or walnuts
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Marinate Chicken: In a large bowl, season chicken thighs with turmeric, cumin, coriander, cinnamon, salt, and pepper. Let marinate for at least 15 minutes.
- Sauté Onions: In a large skillet or Dutch oven, heat vegetable oil over medium heat. Add chopped onions and sauté until golden brown, about 5-7 minutes.
- Add Garlic: Stir in minced garlic and sauté for an additional minute until fragrant.
- Brown the Chicken: Add the marinated chicken thighs to the skillet and brown on all sides, about 6-8 minutes.
- Add Liquid: Pour in the chicken broth (or water) to the skillet. Bring to a gentle boil.
- Incorporate Fruit and Nuts: Once boiling, stir in the dried apricots and slivered almonds or walnuts.
- Simmer: Lower the heat to a simmer, cover, and cook for about 45 minutes, or until the chicken is tender and cooked through.
- Adjust Seasoning: Taste and adjust seasoning if necessary.
- Serve: When ready, garnish with fresh parsley before serving.
Notes
- You can substitute the nuts with your favorite type or omit them for a nut-free version.
- Serve with rice or flatbread for a complete meal.
- This dish can be made a day ahead and tastes even better the next day.
