Pineapple Christmas Balls are a festive delight to make, combining the tropical sweetness of pineapple with creamy cheese and crunchy nuts.

Ingredients

Scale
  • 1 cup canned pineapple chunks (drained)
  • 8 oz cream cheese (softened)
  • 1 cup powdered sugar
  • ½ cup chopped walnuts or pecans
  • ½ cup unsweetened shredded coconut

Instructions

  1. Drain the canned pineapple chunks thoroughly to remove excess moisture.
  2. In a large mixing bowl, combine drained pineapple, softened cream cheese, and powdered sugar. Mix until smooth.
  3. Stir in chopped nuts and shredded coconut until evenly distributed.
  4. Scoop out tablespoon-sized portions and roll into balls using your hands.
  5. Place the balls on a parchment-lined tray and refrigerate for at least one hour to firm up.
  6. Serve chilled on a festive platter, optionally drizzled with extra coconut or crushed nuts.
