Instructions
- Drain the canned pineapple chunks thoroughly to remove excess moisture.
- In a large mixing bowl, combine drained pineapple, softened cream cheese, and powdered sugar. Mix until smooth.
- Stir in chopped nuts and shredded coconut until evenly distributed.
- Scoop out tablespoon-sized portions and roll into balls using your hands.
- Place the balls on a parchment-lined tray and refrigerate for at least one hour to firm up.
- Serve chilled on a festive platter, optionally drizzled with extra coconut or crushed nuts.
