Description

Pineapple Squares Graham Crust is a delightful and refreshing dessert featuring a crumbly graham cracker base, creamy pineapple frosting, and a light whipped cream topping.


Ingredients

  • 175 g graham cracker crumbs
  • 75 g unsalted butter, melted
  • 40 g granulated sugar
  • 115 g cream cheese, softened
  • 115 g unsalted butter, softened
  • 625750 g icing sugar
  • 5 ml vanilla extract
  • 120 g fresh golden pineapple, finely diced and well drained
  • 250 ml whipping cream
  • 5 ml vanilla extract
  • 24 g icing sugar

Instructions

  1. Create a well in the center of the graham crumbs in a medium mixing bowl. Add granulated sugar to the well and pour in the melted butter. Allow to stand for 2 minutes.
  2. Mix the crumb mixture thoroughly and firmly press it into the base of a lightly greased and parchment-lined 23 x 23 cm baking pan.
  3. Using a stand mixer or hand beater, cream together the softened butter and cream cheese until smooth.
  4. Add the vanilla extract and mix until incorporated.
  5. Gradually blend in the icing sugar until a very stiff frosting forms. Gently fold in the finely diced pineapple.
  6. Spread the pineapple frosting evenly over the prepared crumb base. Chill in the refrigerator for several hours or overnight.
  7. Whip the cream with vanilla extract and icing sugar until stiff peaks form.
  8. Spread the whipped cream evenly over the set pineapple frosting layer.
  9. Store chilled until ready to serve. Cut into squares and serve cold.
