Pineapple Upside-Down Cookies are a delightful treat featuring a buttery cookie base topped with caramelized brown sugar, pineapple, and a cherry. These unique cookies are perfect for a snack or dessert.


Ingredients

  • Unsalted Butter (½ cup, softened)
  • Granulated Sugar (¾ cup)
  • Large Egg (1)
  • Vanilla Extract (1 tsp)
  • All-Purpose Flour (1 ¼ cups)
  • Baking Powder (½ tsp)
  • Salt (¼ tsp)
  • Brown Sugar (½ cup)
  • Melted Butter (2 tbsp)
  • Pineapple Rings (1 small can, cut into smaller pieces)
  • Maraschino Cherries (halved)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until a soft dough forms.
  6. In a small bowl, mix the melted butter and brown sugar until smooth.
  7. Spoon about 1 teaspoon of the brown sugar mixture onto the lined baking sheet, spacing them apart.
  8. Place a small piece of pineapple on top of each brown sugar base.
  9. Add a maraschino cherry half in the center of the pineapple.
  10. Scoop about 1 ½ tablespoons of cookie dough, flatten it slightly, and place it over the pineapple.
  11. Bake in the preheated oven for 12-15 minutes, or until golden around the edges.
  12. Remove and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  13. Once cooled, flip the cookies upside-down to reveal the topping.
