- 3 cups all-purpose flour
- ¼ cup granulated sugar
- 2¼ teaspoons active dry yeast (1 packet)
- ¾ cup warm milk (about 110°F / 43°C)
- ¼ cup unsalted butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 cup poppy seeds
- ¼ cup granulated sugar (for filling)

Instructions
- In a small bowl, combine the warm milk and yeast. Let it sit for 5–10 minutes until foamy.
- In a large mixing bowl, whisk together flour, sugar, and salt.
- Add the yeast mixture, melted butter, eggs, and vanilla extract to the dry ingredients.
- Mix until a soft dough forms. Knead by hand or with a dough hook for 8–10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a kitchen towel, and let rise in a warm spot for 1–1.5 hours or until doubled in size.
- In a saucepan over medium heat, combine milk, sugar, and butter for the filling. Stir until the sugar dissolves and the butter melts.
- Add the poppy seeds and cook for 3–5 minutes, stirring constantly, until thickened.
- Remove from heat and stir in vanilla extract. Let the filling cool to room temperature.
- Punch down the risen dough and roll it out on a lightly floured surface into a rectangle (about 12×16 inches).
- Spread the cooled poppy seed filling evenly over the dough.
- Roll the dough up tightly from the long side, like a jelly roll. Pinch the seam to seal.
- Place the roll seam-side down on a parchment-lined baking sheet. Cover and let rise again for 30–45 minutes.
- Preheat the oven to 350°F (175°C).
- Bake for 30–35 minutes, or until golden brown and cooked through.
- Let cool on a wire rack. Optional: Dust with powdered sugar or drizzle with icing once cooled.

- Ensure that the milk is warm, not hot, to activate the yeast properly.
- You can add nuts or dried fruits to the filling for extra flavor.
