Description

Delicious pumpkin-flavored macarons with a creamy filling that will delight your taste buds.


Ingredients

  • 1 3/4 cups powdered sugar
  • 1 cup almond flour
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp cream of tartar
  • 1/2 cup butter
  • 1/2 cup cream cheese
  • 1/2 cup pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Sift powdered sugar and almond flour together, set aside.
  2. In a clean bowl, whisk egg whites until foamy. Add cream of tartar and gradually add granulated sugar, whisking to stiff peaks.
  3. Fold the almond flour mixture into the egg whites gently until batter flows like lava.
  4. Pipe circles onto baking sheets lined with parchment paper.
  5. Let rest at room temperature for 30 minutes until a skin forms.
  6. Preheat oven to 300°F (150°C) and bake macarons for 15 minutes.
  7. Allow to cool completely before filling.
  8. Beat butter and cream cheese until smooth.
  9. Add pumpkin puree, pumpkin pie spice, powdered sugar, and vanilla extract. Mix until creamy.
  10. Pipe or spread filling onto half of the macaron shells.
  11. Top with remaining shells to form sandwiches.
  12. Refrigerate for at least 1 hour before serving.
