- 1 3/4 cups powdered sugar
- 1 cup almond flour
- 3 large egg whites
- 1/4 cup granulated sugar
- 1/2 tsp vanilla extract
- 1/4 tsp cream of tartar
- 1/2 cup butter
- 1/2 cup cream cheese
- 1/2 cup pumpkin puree
- 1 tsp pumpkin pie spice
- 1 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Sift powdered sugar and almond flour together, set aside.
- In a clean bowl, whisk egg whites until foamy. Add cream of tartar and gradually add granulated sugar, whisking to stiff peaks.
- Fold the almond flour mixture into the egg whites gently until batter flows like lava.
- Pipe circles onto baking sheets lined with parchment paper.
- Let rest at room temperature for 30 minutes until a skin forms.
- Preheat oven to 300°F (150°C) and bake macarons for 15 minutes.
- Allow to cool completely before filling.
- Beat butter and cream cheese until smooth.
- Add pumpkin puree, pumpkin pie spice, powdered sugar, and vanilla extract. Mix until creamy.
- Pipe or spread filling onto half of the macaron shells.
- Top with remaining shells to form sandwiches.
- Refrigerate for at least 1 hour before serving.
Notes
- Make sure to age the egg whites for best results.
