Description
Delight in this easy-to-make pumpkin trifle, layered with spice cake, creamy pumpkin mixture, and whipped topping.

- 15.25 ounce spice cake mix
- 1 cup water
- 3 large eggs, room temperature
- ½ cup vegetable oil
- 8 ounce package cream cheese, softened
- ¾ cup powdered sugar, sifted
- 15 ounce canned pumpkin puree (not pie filling)
- 2 teaspoons pure vanilla extract
- 2 teaspoons pumpkin pie spice
- 16 ounce container whipped topping, thawed
- 1 cup chopped toffee bits (divide ⅓ cup and ⅓ cup for layers and ⅓ cup for garnish)
Instructions
- Preheat the oven to 350°F. Lightly spray a 9×13 baking dish with baker’s spray.
- In a medium size bowl, mix together the cake mix, water, eggs, and vegetable oil. Pour the batter into the prepared baking dish and bake for about 23 to 25 minutes, or until a toothpick inserted comes out clean.
- Once completely cooled, slice into 1 inch cubes.
- Using either a stand mixer fitted with a paddle attachment, or a large mixing bowl and a handheld mixer on medium high speed, mix the softened cream cheese for 1 ½ – 2 minutes until smooth.
- Add the powdered sugar and mix for another 1 to 1 ½ minutes until completely incorporated.
- Mix in the pumpkin puree, pumpkin pie spice, and vanilla until well combined and creamy.
- In a trifle bowl, create a single layer of cake cubes at the bottom.
- Layer half of the pumpkin mixture on top of the cake layer.
- Spoon ½ of the whipped topping over the pumpkin layer.
- Sprinkle ⅓ cup of toffee bits over the whipped topping.
- Layer more cake cubes over the toffee layer.
- Repeat the layers with the pumpkin mixture, remaining whipped topping, and toffee bits.
- Spread the remaining whipped topping over the final cake layer.
- Sprinkle the remaining toffee bits over the whipped topping layer.
- Chill in the refrigerator until ready to serve.
Notes
- Can be prepared ahead of time and stored in the refrigerator.
- The cake cubes do not need to be uniform in size.
- Feel free to adjust the amount of toffee bits for garnish according to your preference.
