Ingredients

  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant but not browned.
  3. Add the lemon zest and juice to the skillet, followed by the red pepper flakes if using. Stir to combine and let it cook for another minute.
  4. Add the drained spaghetti to the skillet and toss to coat in the lemon-garlic mixture. If the pasta seems dry, gradually add reserved pasta water until you reach your desired consistency.
  5. Stir in the grated Parmesan cheese and season with salt and pepper to taste. Toss until everything is well combined and the cheese is melted.
  6. Serve immediately, garnished with fresh parsley and additional Parmesan if desired.
