Ingredients

- 2 lbs red potatoes, cut into bite-sized pieces
- 1/2 cup ranch dressing
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/3 cup chopped red onion
- 1/2 cup cooked and crumbled bacon
- 1/4 cup chopped fresh chives
- 1/4 cup chopped parsley
- 2 hard-boiled eggs, chopped (optional)
Instructions
- Boil the potatoes in salted water until fork-tender, about 10-12 minutes. Drain and let cool.
- In a large bowl, whisk together ranch dressing, mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and pepper.
- Add the cooled potatoes to the bowl along with red onion, bacon, chives, parsley, and eggs (if using).
- Toss gently to coat the potatoes evenly with the dressing mixture.
- Cover and chill for at least 1 hour before serving to allow flavors to meld.
- Garnish with extra bacon or herbs if desired before serving.
Notes
- For a healthier option, consider using Greek yogurt instead of mayonnaise.
