Description

A fresh and flavorful Raw Carrot Salad that combines crisp carrots with a delightful dressing.


Ingredients

Scale
  • 4 to 5 large carrots, peeled and ribboned
  • 1½ tablespoons low sodium soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon maple syrup, or honey
  • ½ tablespoon unseasoned rice vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon toasted sesame seeds
  • 2 green onions, sliced

Instructions

  1. In a small bowl, mix together the soy sauce, sesame oil, maple syrup, rice vinegar, and minced garlic.
  2. In a large mixing bowl or salad bowl, add the ribboned carrots, toasted sesame seeds, green onions, and salad dressing.
  3. Toss well to combine.
  4. If you have the time, cover and let the salad chill in the fridge for 10 minutes to let the flavors meld together before serving.
