A fresh and flavorful Raw Carrot Salad that combines crisp carrots with a delightful dressing.
Ingredients
Scale
- 4 to 5 large carrots, peeled and ribboned
- 1½ tablespoons low sodium soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon maple syrup, or honey
- ½ tablespoon unseasoned rice vinegar
- 1 tablespoon minced garlic
- 1 tablespoon toasted sesame seeds
- 2 green onions, sliced
Instructions
- In a small bowl, mix together the soy sauce, sesame oil, maple syrup, rice vinegar, and minced garlic.
- In a large mixing bowl or salad bowl, add the ribboned carrots, toasted sesame seeds, green onions, and salad dressing.
- Toss well to combine.
- If you have the time, cover and let the salad chill in the fridge for 10 minutes to let the flavors meld together before serving.

- This salad is best served fresh but can be stored in the refrigerator for a day.
