- 95 grams granulated sugar (scant ½ cup)
- ⅛ teaspoon cream of tartar (optional)
- ⅛ teaspoon table salt
- 1 teaspoon vanilla extract
- Red food coloring (gel recommended)
- 4 oz cream cheese (softened)
- ¼ cup unsalted butter (4 Tablespoons, softened)
- ½ teaspoon vanilla extract

- 1 ¾ cups powdered sugar
Instructions
- Ensure all equipment is clean, dry, and grease-free. Line cookie sheets with parchment paper or silicone mats.
- Sift almond flour, powdered sugar, and cocoa powder in a bowl and set aside.
- In a separate bowl, beat egg whites until foamy.
- Add cream of tartar and continue beating.
- Gradually add granulated sugar, beating until stiff peaks form.
- Add vanilla extract, salt, and red food coloring. Mix until combined.
- Fold in the dry ingredients mixture in three portions until smooth and flowing.
- Transfer batter to a piping bag and pipe 1 ½” circles onto baking sheets, spacing them 2” apart.
- Firmly bang the baking sheets to release air bubbles and then allow macarons to rest until a skin forms.
- Preheat oven to 325°F (160°C) and bake macarons for 10-11 minutes.
- Let cooling completely before filling.
- Prepare cream cheese filling by mixing cream cheese, butter, vanilla, and salt until smooth, then gradually adding powdered sugar.
- Pipe filling onto one macaron shell and sandwich with another. Let mature in the fridge for 24 hours.
