Description

Ingredients

  • 1/3 cup buttermilk

  • 2 teaspoons red liquid food coloring
  • 4 ounces cream cheese (softened)
  • For the crumb topping: 1/2 cup granulated sugar, 1/4 cup all-purpose flour, and 2 tablespoons unsalted butter (diced)

Instructions

  1. Preheat your oven to 375°F and prepare a non-stick muffin pan.
  2. For the crumb topping, mix sugar and flour in a medium bowl, then cut in butter until coarse crumbs form.
  3. In another bowl, blend cream cheese, sugar, and vanilla until smooth; set aside.
  4. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  5. In a separate bowl, whisk together egg, oil, buttermilk, cocoa powder, and food coloring.
  6. Combine wet and dry ingredients until just moistened; fold in the cream cheese mixture gently.
  7. Fill muffin cups two-thirds full and sprinkle with crumb topping.
  8. Bake for 17 to 19 minutes or until a toothpick comes out clean.
