Description

A festive and colorful Red, White, & Blue Swirl Bundt Cake perfect for celebrations.


Ingredients

  • 2 cups (240g) all-purpose flour
  • 2 Tablespoons (15g) cornstarch
  • 1 and ¾ cups (350g) granulated sugar
  • 5 teaspoons baking powder
  • 1 teaspoon salt
  • 12 Tablespoons (170g) unsalted butter, softened to room temperature
  • 1 cup (240mL) heavy cream, room temperature
  • 6 large egg whites, room temperature
  • 2 and ½ teaspoons vanilla extract
  • red food coloring
  • blue food coloring
  • ½ cup (113g) unsalted butter, softened to room temperature (for frosting)
  • 2 cups (240g) powdered sugar (for frosting)
  • ½ teaspoon vanilla extract (for frosting)
  • 2 Tablespoons (30mL) milk or cream (for frosting)
  • salt to taste (for frosting)

Instructions

  1. Preheat the oven to 350ºF (177ºC) and grease and flour a 10″ bundt pan.
  2. In a large bowl, combine flour, cornstarch, sugar, baking powder, and salt. Blend on low until combined.
  3. Add softened butter and mix until it resembles sand.
  4. In a separate container, mix heavy cream, egg whites, and vanilla extract until blended.
  5. With the mixer on medium-low, add half of the milk mixture to the dry ingredients and mix until blended.
  6. Add the remaining milk mixture and beat until incorporated. Scrape down the bowl and beat on medium for 30 seconds until smooth.
  7. Divide the batter into three portions: two small bowls for coloring and one large bowl for the white batter.
  8. Color one small bowl with red food coloring and the other with blue food coloring.
  9. In the bundt pan, add dollops of colored batter and then pour white batter over it, repeating until all batter is used.
  10. Tap the bundt pan gently on the counter and bake for 38-40 minutes or until a toothpick comes out clean.
  11. Cool for 10 minutes, then flip onto a serving dish to cool completely.
  12. For the buttercream, beat softened butter until creamy, then add powdered sugar, vanilla, and milk. Beat until smooth.
  13. Decorate the cooled cake with buttercream as desired.

  • Use room temperature ingredients for best results.
  • Gel food coloring is recommended for vibrant colors.
  • Using cream keeps the cake moist and adds creaminess.
