Reuben Balls are a delicious twist on a classic snack, combining flavors of corned beef, sauerkraut, and Swiss cheese into bite-sized delights.

- 1 cup corned beef (cooked, chopped)
- 1 cup sauerkraut (squeezed, chopped)
- ½ cup shredded Swiss cheese
- 1 egg
- 2 tbsp oil
- 1 cup all-purpose flour (or half rye flour)
- 1 tsp baking powder
- ½ tsp baking soda
- Pinch of salt
- 1 tsp caraway seeds
- ½ tsp paprika
- ¼ cup mayo
- ¼ cup ketchup
- 2 tsp relish
- 1 tsp prepared horseradish
- ½ tsp onion powder
- ½ tsp garlic powder
Instructions
- Preheat oven to 350°F (175°C).
- Whisk egg and oil in a large bowl.
- Add flour, baking soda, powder, salt, caraway, and paprika. Mix.
- Fold in corned beef, sauerkraut, and cheese.
- Drop batter into greased cake pop pan or mini muffin tin.
- Bake 20–25 minutes until golden and cooked through.
- For sauce: mix all ingredients until smooth. Chill.
- Serve warm balls with dipping sauce.
Notes
- For a gluten-free option, use gluten-free flour.
- These can be made in advance and reheated before serving.
