- 1/4 teaspoon cinnamon
Instructions
- In a large mixing bowl, combine the rolled oats, almond flour, shredded coconut, chopped rhubarb, salt, and cinnamon. Mix well to ensure the dry ingredients are evenly distributed.
- In a separate bowl, whisk together the maple syrup, almond butter, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir until everything is well combined and forms a sticky mixture.
- Using your hands, roll small portions of the mixture into bite-sized balls, about 1 inch in diameter.
- Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
