- 2 cups rhubarb, chopped
- 1/2 cup sugar
- 1 cup Greek yogurt
- 1/2 teaspoon vanilla extract
- 1 cup granola
- Fresh mint leaves for garnish (optional)
Instructions
- In a medium saucepan over medium heat, combine the chopped rhubarb and sugar. Stir well and cook for about 5-7 minutes, until the rhubarb breaks down and becomes a thick sauce. Remove from heat and let it cool completely.
- In a mixing bowl, combine the Greek yogurt and vanilla extract. Stir until well blended.
- To assemble the parfaits, begin layering the ingredients in serving glasses or bowls. Start with a layer of the rhubarb sauce, followed by a layer of the yogurt mixture, and then a layer of granola.
- Repeat the layering process until the glasses are filled, finishing with a layer of granola on top.
- Garnish with fresh mint leaves if desired and serve immediately or refrigerate for up to 2 hours for a chilled treat.
