- 12 ounces spaghetti
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1 lemon, zested and juiced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Red pepper flakes (optional, for garnish)
Instructions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
- In a large mixing bowl, combine the ricotta cheese, grated Parmesan cheese, lemon zest, lemon juice, and olive oil. Mix until smooth and creamy.
- In a large skillet over medium heat, add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add the drained spaghetti to the skillet and toss to coat with the garlic. Gradually add the ricotta mixture, stirring to combine. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.
- Stir in the chopped basil and parsley, and season with salt and pepper to taste.
- Serve immediately, garnished with additional herbs and a sprinkle of red pepper flakes if desired.
