Ingredients

  • 1 pound carrots, peeled and halved lengthwise
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/2 cup ricotta cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon honey
  • 1/2 teaspoon chili flakes (adjust to taste)
  • 2 tablespoons sliced almonds, toasted
  • Fresh herbs (like parsley or thyme), for garnish

Instructions

  1. Preheat oven to 425°F (220°C). Toss carrots with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway, until tender and slightly caramelized.
  2. In a small bowl, whisk together ricotta cheese, lemon juice, lemon zest, and a pinch of salt until smooth and creamy. Set aside.
  3. Warm honey gently in a saucepan or microwave. Stir in chili flakes and let infuse for a few minutes.
  4. In a dry skillet over medium heat, toast sliced almonds until golden brown, about 2–3 minutes. Set aside.
  5. Spread a generous layer of whipped ricotta on a serving plate. Arrange the roasted carrots over the ricotta. Drizzle with hot honey and sprinkle toasted almonds on top.
  6. Finish with fresh herbs and an extra drizzle of olive oil if desired. Serve warm or at room temperature.
