Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 34 tablespoons ice water
  • 2 cups fresh cranberries
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves
  • 8 oz soft goat cheese
  • 1/4 cup heavy cream
  • 2 large eggs
  • 1/4 teaspoon black pepper
  • Zest of 1 orange

Instructions

  1. Prepare the crust by mixing flour and salt in a food processor. Pulse in cold butter until mixture resembles coarse crumbs.
  2. Gradually add ice water until dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
  3. Preheat oven to 375°F. Roll out chilled dough and press into a 9-inch tart pan.
  4. Toss cranberries with honey, olive oil, and thyme. Spread on a baking sheet and roast for 10 minutes until slightly softened.
  5. Whisk goat cheese, cream, eggs, pepper, and orange zest until smooth.
  6. Spread cheese mixture into tart crust. Top with roasted cranberries.
  7. Bake for 25-30 minutes until filling is set and edges are golden brown.
  8. Cool for 15 minutes before serving.
