Description

A delightful tart featuring roasted cranberries and creamy goat cheese, perfect for festive occasions.


Ingredients

Scale
  • 2 cups Cranberries, fresh
  • 1 Orange, Zest of
  • 1 tbsp Thyme, fresh leaves
  • 2 Eggs, large
  • 1/4 cup Honey
  • 1 1/2 cups All-purpose flour
  • 1/4 tsp Black pepper
  • 1/2 tsp Salt
  • 2 tbsp Olive oil
  • 3 tbsp Ice water
  • 1/2 cup Butter, unsalted
  • 8 oz Goat cheese, soft
  • 1/4 cup Heavy cream

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix cranberries, orange zest, thyme, honey, and olive oil.
  3. Spread the mixture on a baking sheet and roast for 20 minutes.
  4. In a mixing bowl, combine flour, salt, and black pepper.
  5. Add butter and mix until crumbly.
  6. Gradually add ice water and form a dough.
  7. Roll out the dough and fit it into a tart pan.
  8. In another bowl, whisk the eggs, cream, and goat cheese until smooth.
  9. Once cranberries are roasted, fold them into the egg and cheese mixture.
  10. Pour the mixture into the tart shell.
  11. Bake for 30-35 minutes or until set and golden.
  12. Let it cool slightly before serving.

  • Serve warm or at room temperature.
  • This tart can be made a day in advance.
  • Garnish with extra thyme leaves if desired.
