- 2 cups Cranberries, fresh
- 1 Orange, Zest of
- 1 tbsp Thyme, fresh leaves
- 2 Eggs, large
- 1/4 cup Honey
- 1 1/2 cups All-purpose flour
- 1/4 tsp Black pepper
- 1/2 tsp Salt
- 2 tbsp Olive oil
- 3 tbsp Ice water
- 1/2 cup Butter, unsalted
- 8 oz Goat cheese, soft
- 1/4 cup Heavy cream
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix cranberries, orange zest, thyme, honey, and olive oil.
- Spread the mixture on a baking sheet and roast for 20 minutes.
- In a mixing bowl, combine flour, salt, and black pepper.
- Add butter and mix until crumbly.
- Gradually add ice water and form a dough.
- Roll out the dough and fit it into a tart pan.
- In another bowl, whisk the eggs, cream, and goat cheese until smooth.
- Once cranberries are roasted, fold them into the egg and cheese mixture.
- Pour the mixture into the tart shell.
- Bake for 30-35 minutes or until set and golden.
- Let it cool slightly before serving.
Notes
- Serve warm or at room temperature.
- This tart can be made a day in advance.
- Garnish with extra thyme leaves if desired.
