A delicious and creamy dip made with roasted jalapeños, cream cheese, and a blend of other tasty ingredients.

- 2 fresh jalapeños
- 8 oz cream cheese, softened
- 0.5 cup sour cream
- 1 cup shredded sharp cheddar cheese
- 0.5 cup cooked bacon, crumbled
- 0.5 cup corn (fresh, canned, or thawed frozen)
- 0.25 cup chopped green onions
- 1 oz ranch seasoning mix (1 packet)
- Salt and pepper to taste
Instructions
- Set your oven to broil. Place the jalapeños on a foil-lined baking sheet and broil for 5-7 minutes, turning once, until the skins are blistered. Let cool, then peel, deseed if needed, and finely chop.
- In a mixing bowl, blend the cream cheese, sour cream, and ranch seasoning until smooth and fluffy.
- Fold in the chopped roasted jalapeños, cheddar cheese, bacon, corn, and green onions. Add salt and pepper to taste.
- (Optional) Preheat oven to 375°F (190°C). Transfer the mixture to a baking dish and bake for 15-20 minutes until bubbly and golden.
- Serve warm with crackers, chips, or veggies—or chill and use as a spread.
Notes
- Remove the jalapeño seeds if you prefer a milder dip.
- This dip is great both warm and cold, depending on the occasion.
- Add a splash of lime juice for a citrusy twist or extra heat with diced serrano.
