A delicious twist on greens featuring roasted radishes, mixed greens, and goat cheese.


Ingredients

  • 1 pound radishes, washed and trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 4 cups mixed greens
  • ½ cup crumbled goat cheese
  • ¼ cup toasted pecans, roughly chopped
  • 2 tablespoons balsamic vinaigrette (store-bought or homemade)
  • Optional: 1 tablespoon honey for drizzling
  • Optional: Fresh chives, chopped, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Wash and trim radishes. Halve or quarter them depending on size. Toss with olive oil, salt, and pepper.
  2. Spread radishes in a single layer on a baking sheet. Roast for 20-25 minutes, or until tender and slightly browned, stirring halfway through.
  3. In a large bowl, combine mixed greens and slightly cooled roasted radishes.
  4. Sprinkle with crumbled goat cheese and toasted pecans.
  5. Drizzle with balsamic vinaigrette and honey (if using). Garnish with chives (if using). Toss gently and serve immediately.
