A delicious twist on greens featuring roasted radishes, mixed greens, and goat cheese.

- 1 pound radishes, washed and trimmed
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 4 cups mixed greens
- ½ cup crumbled goat cheese
- ¼ cup toasted pecans, roughly chopped
- 2 tablespoons balsamic vinaigrette (store-bought or homemade)
- Optional: 1 tablespoon honey for drizzling
- Optional: Fresh chives, chopped, for garnish
Instructions
- Preheat oven to 400°F (200°C). Wash and trim radishes. Halve or quarter them depending on size. Toss with olive oil, salt, and pepper.
- Spread radishes in a single layer on a baking sheet. Roast for 20-25 minutes, or until tender and slightly browned, stirring halfway through.
- In a large bowl, combine mixed greens and slightly cooled roasted radishes.
- Sprinkle with crumbled goat cheese and toasted pecans.
- Drizzle with balsamic vinaigrette and honey (if using). Garnish with chives (if using). Toss gently and serve immediately.
Notes
- The salad can be served warm or at room temperature.
- Feel free to add other toppings like avocado or nuts of your choice.
