Description

Delicious and easy-to-make Rotel Cream Cheese Balls, perfect for parties and gatherings.


Ingredients

  • 2 (8 oz) packages cream cheese, softened to room temperature
  • 1 (10 oz) can Rotel diced tomatoes and green chilies, thoroughly drained
  • 1½ cups shredded sharp cheddar cheese
  • 1 packet ranch seasoning mix (1 oz)
  • 2 green onions, finely chopped
  • 2 cups finely chopped pecans (or substitute with crushed crackers for nut allergies)
  • 2 tablespoons fresh cilantro, chopped (substitute with parsley for cilantro-averse guests)
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika

Instructions

  1. In a mixing bowl, combine the softened cream cheese, Rotel tomatoes, shredded cheddar cheese, ranch seasoning, green onions, cilantro, garlic powder, and smoked paprika. Mix until well combined.
  2. Form the mixture into balls, approximately 1 inch in diameter.
  3. Roll each ball in the finely chopped pecans until coated evenly.
  4. Place the cream cheese balls on a serving platter and cover with plastic wrap.
  5. Chill in the refrigerator for at least 2 hours to firm up before serving.

Notes

  • For a milder flavor, use original Rotel tomatoes; for more heat, use the hot variety.
  • Can substitute pecans with crushed crackers for guests with nut allergies.
  • Fresh parsley can be a good alternative for those averse to cilantro.
