- 2 (8 oz) packages cream cheese, softened to room temperature
- 1 (10 oz) can Rotel diced tomatoes and green chilies, thoroughly drained
- 1½ cups shredded sharp cheddar cheese
- 1 packet ranch seasoning mix (1 oz)
- 2 green onions, finely chopped
- 2 cups finely chopped pecans (or substitute with crushed crackers for nut allergies)
- 2 tablespoons fresh cilantro, chopped (substitute with parsley for cilantro-averse guests)
- ½ teaspoon garlic powder
- ¼ teaspoon smoked paprika
Instructions
- In a mixing bowl, combine the softened cream cheese, Rotel tomatoes, shredded cheddar cheese, ranch seasoning, green onions, cilantro, garlic powder, and smoked paprika. Mix until well combined.
- Form the mixture into balls, approximately 1 inch in diameter.
- Roll each ball in the finely chopped pecans until coated evenly.
- Place the cream cheese balls on a serving platter and cover with plastic wrap.
- Chill in the refrigerator for at least 2 hours to firm up before serving.
Notes
- For a milder flavor, use original Rotel tomatoes; for more heat, use the hot variety.
- Can substitute pecans with crushed crackers for guests with nut allergies.
- Fresh parsley can be a good alternative for those averse to cilantro.
