Description

Sage Fried Chicken and Waffles is a delightful dish featuring crispy fried chicken served on warm, fluffy waffles, enhanced with the flavor of sage.


Ingredients

  • 1 cup buttermilk
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 bone-in, skin-on chicken thighs
  • 1 tbsp fresh sage, finely chopped (or 1 tsp dried sage)
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Vegetable oil, for frying
  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract

Instructions

  1. Marinate chicken thighs in buttermilk, salt, pepper, and chopped sage for at least 2 hours or overnight.
  2. In a shallow bowl, mix flour, paprika, garlic powder, and a pinch of salt.
  3. Heat oil in a deep skillet or fryer to 350°F (175°C).
  4. Remove chicken from marinade, letting excess drip off, then dredge in the seasoned flour mixture, coating evenly.
  5. Fry chicken in batches for about 12-15 minutes until golden brown and cooked through (internal temperature 165°F/74°C). Drain on paper towels.
  6. While chicken cooks, preheat waffle iron. In a bowl, whisk together flour, sugar, baking powder, and salt.
  7. In another bowl, beat eggs, then add milk, melted butter, and vanilla extract. Combine wet and dry ingredients just until mixed.
  8. Pour batter into waffle iron and cook according to manufacturer’s instructions until waffles are golden and crisp.
  9. Serve fried chicken on top of warm waffles. Drizzle with maple syrup and garnish with fresh sage if desired.
