- 4 bone-in, skin-on chicken thighs

- 1/2 tsp garlic powder
- Vegetable oil, for frying
- 2 cups all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 1 3/4 cups milk
- 1/2 cup unsalted butter, melted
- 1 tsp vanilla extract
Instructions
- Marinate chicken thighs in buttermilk, salt, pepper, and chopped sage for at least 2 hours or overnight.
- In a shallow bowl, mix flour, paprika, garlic powder, and a pinch of salt.
- Heat oil in a deep skillet or fryer to 350°F (175°C).
- Remove chicken from marinade, letting excess drip off, then dredge in the seasoned flour mixture, coating evenly.
- Fry chicken in batches for about 12-15 minutes until golden brown and cooked through (internal temperature 165°F/74°C). Drain on paper towels.
- While chicken cooks, preheat waffle iron. In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, beat eggs, then add milk, melted butter, and vanilla extract. Combine wet and dry ingredients just until mixed.
- Pour batter into waffle iron and cook according to manufacturer’s instructions until waffles are golden and crisp.
- Serve fried chicken on top of warm waffles. Drizzle with maple syrup and garnish with fresh sage if desired.
