A quick and delightful recipe featuring succulent salmon bites served over creamy lemon butter orzo.

- 1 lb skinless salmon fillet, cut into cubes
- 1 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp paprika
- Salt and pepper, to taste
- 1 tbsp lemon juice
- 1 tbsp fresh parsley, chopped (for garnish)
- 1 cup orzo pasta
- 2 tbsp butter
- 2 cloves garlic, minced
- Zest and juice of 1 lemon
- ¼ cup grated Parmesan cheese
- 1½ cups low-sodium chicken broth (or water)
- Salt and pepper, to taste
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- In a saucepan, melt 1 tbsp butter over medium heat. Add orzo and toast for 2 minutes, stirring until lightly golden. Pour in broth or water, bring to a boil, then reduce heat. Simmer for 8–10 minutes until tender and liquid is mostly absorbed. Stir in garlic, lemon juice and zest, Parmesan, remaining butter, salt, and pepper. Cover and set aside.
- Toss salmon cubes with olive oil, garlic powder, paprika, salt, and pepper. Heat a skillet over medium-high heat. Sear salmon for 2–3 minutes per side until golden and fully cooked (internal temp: 145°F/63°C). Drizzle with lemon juice just before removing from heat.
- Spoon lemon butter orzo onto plates. Top with salmon bites. Garnish with fresh parsley and a touch of extra lemon zest if desired. Serve warm and enjoy!
