Ingredients
Scale
- 1 pound fresh salmon filet
- 1 tablespoon olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon pepper
- 2 large eggs, room temperature
- 1 teaspoon garlic, minced
- ¼ cup yellow onion, chopped
- ½ cup dry bread crumbs
- 1 teaspoon old bay seasoning
- ½ teaspoon kosher salt
- 1 tablespoon olive oil
- lemon wedges, for garnish (optional)
- tartar sauce, for serving
Instructions
- Preheat the oven to 400˚F and line a baking sheet with parchment paper.
- Place the salmon on the baking sheet, skin down. Drizzle with olive oil, salt, and pepper.
- Bake for 15-20 minutes, or until flaky. Remove from the oven and let it rest until cool enough to touch.
- Once cooled, use two forks to flake the salmon and set it in a large bowl. Discard the skin and any bones.
- Add the eggs, garlic, onion, bread crumbs, old bay seasoning, and salt to the bowl. Stir to combine.
- Form the mixture into 8 patties that are about 2 inches wide by ½-inch thick.
- Heat olive oil in a large skillet over medium heat. Place the patties in the skillet in an even layer, cooking in batches if necessary.
- Brown the patties for 3-5 minutes on one side, then flip and brown the other side for another 3-5 minutes.
- Set the cooked patties on a paper towel to drain.
- Serve warm with freshly squeezed lemon and homemade tartar sauce (optional).
Notes
- Ensure salmon is fully cooked to 145°F for safety.
- Adjust seasoning to taste if desired.
- Can be served with a side salad or steamed vegetables.
